What's Cooking Wednesday!

At this point, you may think that all I cook or bake in my house is chicken and some sort of muffin or coffee cake. We do prepare a lot of chicken, but it's not all we eat. I do have another chicken dish recipe, though, for today, and I promise, it is worth it. It is again from the Weight Watcher's Cookbook. In the words of Howie, who is quite the food critic, "This is probably one of the BEST chicken recipes you have ever made!" It is quite tasty and we will put it on our list of "Must Make Again Recipes!"

Chicken with Apples and Cider
2 TBS Vegetable oil
1 Granny Smith Apple (I used a Gala Apple) cored and sliced
1 TBS packed brown sugar
4 boneless, skinless chicken breasts
1/4 tsp cinnamon
1/4 tsp salt
1/4 tsp freshly ground pepper
1/2 cup apple cider
1/4 cup  vinegar
2 cups rice pilaf
1. In a large skillet over medium heat, heat 1 TBS of oil. Saute apple until lightly brown. sprinkle with brown sugar and cook five minutes longer. transfer to a plate.
2. On a sheet of wax paper, sprinkle chicken breasts with cinnamon, salt, and pepper. Heat remaining oil and saute chicken until browned on both sides (4-5 minutes per side). Transfer to another plate.
3. Bring cider and vinegar to a simmer in skillet. Return chicken and spoon mixture over chicken for another 8 minutes or until chicken is cooked through and liquid is reduced to half. Return apples to skillet and cook until heated through.
4. Prepare rice as directed.
5. Serve chicken and apples over rice with fresh salad greens.
