Y'all, you will never want to buy another box of muffin mix again after trying this recipe! It is easy and mouth-watering delicious!
If you are going to try any made-from-scratch recipe, this one should be it. It comes from The Ultimate Southern Living Cookbook.
The recipe for Blueberry Streusel Muffins:
1 3/4 cups all-purpose flour
2 3/4 tsp baking powder
3/4 tsp salt
1/2 cup sugar
1 large egg lightly beaten
3/4 cup milk
1/3 cup vegetable oil
1 cup fresh blueberries
1 TBS all-purpose flour
1TBS sugar
1/4 cup sugar
2 1/2 TBS all-purpose flour
1/2 tsp ground cinnamon
1 1/2 TBS butter (unsalted)
*Combine first 5 ingredients in a large bowl, sifting them together. Make a well in the center of the mixture.
Combine egg, milk and oil; stir well. Add to dry ingredients stirring until moistened.
*Combine blueberries, 1 TBS flour and 1 TBS sugar stirring gently. Fold blueberry mixture into batter. Spoon batter into greased muffin tins filling 3/4 full.
*Combine 1/4 cup sugar, 2 1/2 TBS flour and cinnamon. Cut in butter in a pastry blender until mixture is crumbly. Sprinkle evenly over batter in each muffin tin.
*Bake at 400 degrees for 18 minutes or until golden.

Those muffins look so good. I wish I was there to try one! I am so proud of you, Amy - you are really getting into that "scratch" cooking! Hope your back is doing better, and y'all are having a great weekend.
